Thomas Chisholm – sous chef at AT restaurant

Thomas was born in Brooklyn and moved to France when he was 12 years old. He studied cooking in Perpignan, France, in the same school than Eric Ripert, chef of Le Bernardin, NYC. Cooking became his passion and he moved to Paris, where he cooked at L’Itineraire a 1 Michelin star restaurant. He then improved his technique and skills with the 2 Michelin star chef, Thierry Marx, at Sur Mesure at the Mandarin Oriental Paris. Before joining AT, Thomas cooked in a neo bistrot, Le 6 Paul Bert, made famous by Anthony Bourdain. Thomas loves refined cuisine but has stayed true to his American childhood and enjoys elevating US classics.

List of the ingredients:
The flat bread dough for 12 English muffin size breads Ingredients:
Melted butter 20 gr
Wheat flour 166 gr
Rye flour 50 gr
Salt: 5 gr
Baker Yeast: 8 gr
Warm Water: 75 gr
Eggs: 1 (use only one third of the beaten egg)
Sugar: 16,5 gr
Milk: 20 gr

For the stuffing mixture
Red onions , Canned mackerel , Oregano, Lemon + lemon zests Fresh garlic, Salt, Olive oil, 1 egg per person (poached)

Recipe of The flat bread dough
Part 1: Mix both flours and salt.
Part 2: Mix yeast with warm water.
Part 3: Mix eggs, sugar, and milk.
Part 4: Melt butter.
Mix Part 1 and Part 3 together.
Once smooth, add Part 2 and mix by hand for 5 minutes. Then, add melted butter.
Clean film and leave in a warm place for 2 hours. Then, put in the fridge.
