Episode 9 – Cooking with Luca – Tiramisu 

“An Italian iconic dessert, in Cinque Terre”

The Chef: Luca Rizzetto (Trattoria via dell’amore, Riomaggiore)

Luca was born in Turin, Piedmont and moved to Cinque Terre for romantic reasons. He immediately fell in love with the region and opened a tea room in La Spezia, before opening his restaurant. Luca loves to teach his passion for Ligurian cuisine and not just pesto. He cooks rustic traditional recipes such
‘Mesciüa’, a soup made with cereals, beans and chickpeas. Testaroli, a kind of pasta with a spongy consistence usually served actually with pesto, mushroom sauce or simply olive oil and parmesan. Panissa, a meat filled ravioli served with mushroom sauce, and of course sea food such as stuffed mussels and calamari.

List of the ingredients:

4 large eggs
100 grams of sugar (50 for the yolks and 50 for the white) 250 grams mascarpone cheese
Italian lady fiingers (savoiardi)
6 cup cold espresso coffee (Italian size cups)
cocoa powder for dusting

Cook at home and stay safe!

Vigorously whisk egg yolks with sugar using a handheld electric mixer at medium speed then beat in mascarpone cheese until it is well incorporated.
Whip whites with sugar in a bowl until it gets firm and gently fold in into the yolk-mascarpone mixture.
Dip the ladyfingers very quickly into the coffee and line the bottom of the baking tray.
Make layers as per the video.
Cover with plastic wrap and keep in the fridge for at least 2 to 3 hours.
Dust with cocoa powder before serving

The Cooking School: Cooking at Trattoria via dell’amore

It is snuggled away in a quiet corner of Riomaggiore along the Cinque Terre in Liguria.
The chef offers an exclusive immersion in the traditional and secret regional cuisine
You will learn how to make the genovese pesto sauce of Luca’s grandmother but also fresh gnocchi. Last, but not least, you will also make together the most famous Italian dessert – the king himself – Tiramisu.
As guests you will then sit at the table with a glass of white from the Cinque Terre and be served your dishes as they are ready.
To complete dessert, a small glass of limoncello.

The village: Riomaggiore

Five fishing and wine-making villages dramatically perched along a 11-mile stretch of Italy’s Ligurian coast. Riomaggiore is one of the most beautiful villages of Cinque Terre with its spectacular colored houses falling into the sea.
